Huevos con Queso



Ingredients:

  • 12 eggs
  • 4 tbl. butter, melted
  • 16 oz. cottage cheese
  • 3 cups shredded Cheddar/Jack cheese
  • 1 4-oz. can chopped green chiles
  • 1/2 cup flour
  • 1 tsp. baking powder
  • 1/4 tsp. cumin

    Combine all ingredients and mix well with a whisk. Pour into well-greased 9" x13" baking dish. This can be made the night before and refrigerated until ready to bake. Bake for 45 minutes. Serve with salsa and sour cream on the side.
